I've recently used up all my homegrown tomato's (yes, all the way through November).  They were not vine ripened so they weren't as flavorful..  So  now I dig into the freezer for my homegrown stash.

Eggplant is one of my favorite things about summer and I'm going to break down and buy some because Ed and I are both craving...
Eggplant-my favorite summertime challenge
 THIS!  By simply grilling this versatile veg it totally changes the flavor (not that it was bad to start with).  Slice it long ways, and salt it to release excess H20,  pat down with dish towel and brush W/olive oil, grill on high until brown, then layer with grilled zucchini, fresh sliced tomatoes, fresh spinach (lightly salted) and buffalo mozzarella.  Bake for 30 min at 350 degree's,  cool slightly and dig in!  Looks like I used regular mozzarella for this one (it's all good!).
